Arroz con Leche

Ingredients for 6 people:

6 cups of milk

2 cups of cream

2 strips of lemon peel

2 strips of orange peel

Cinnamon sticks.

3.5 cups of white rice.

2/3 cup of butter

1.25 cup of sugar

Elaboration:

In a pot, over medium heat, combine the milk, cream, the citrus peels, and the cinnamon. When hot, add the rice, constantly stirring (as if it were a risotto). Let rest to cook over medium-low heat for about 1 hour or until the milk has turned into a creamy liquid that envelops the rice. Then add the butter and sugar. Stir for another 20 minutes, remove the peel from the citrus fruits, the cinnamon stick and set aside. Store in the cold.

Serve in a saucepan, a plate or glass with pieces of cinnamon stick, a little cinnamon sprinkled on it.
